Set your oven to 400°F and coat a 24-cup mini muffin pan with oil or cooking spray.

Mix together the potatoes and eggs, then stir in 3/4 cup cheese. Toss in the chopped chives and sprinkle with a pinch of salt and pepper.

Scoop the mix into the prepared muffin tin and sprinkle the leftover cheese over each one.

Pop them in the oven for around 15-20 minutes until they're nicely browned. Let them sit for 5 minutes, carefully take them out, garnish, and enjoy while warm.
