Cheesy Potato Puffs (Print Version)

# Ingredients:

01 - 2 cups of mashed potatoes at room temperature.
02 - 3 beaten eggs.
03 - 1/4 cup finely chopped fresh chives.
04 - 1 cup shredded Monterey Jack cheese (split into two amounts).
05 - Season with salt and black pepper to your liking.
06 - Optional: Sour cream for dipping.
07 - Extra chives for sprinkling on top.

# Instructions:

01 - Set your oven to 400°F and coat a 24-cup mini muffin pan with oil or cooking spray.
02 - Mix together the potatoes and eggs, then stir in 3/4 cup cheese. Toss in the chopped chives and sprinkle with a pinch of salt and pepper.
03 - Scoop the mix into the prepared muffin tin and sprinkle the leftover cheese over each one.
04 - Pop them in the oven for around 15-20 minutes until they're nicely browned. Let them sit for 5 minutes, carefully take them out, garnish, and enjoy while warm.
