Cheesy Broccoli Soup (Print Version)

# Ingredients:

01 - 3 garlic cloves, minced.
02 - 1 onion, chopped.
03 - 4 tablespoons butter.
04 - Black pepper to taste.
05 - 1/2 teaspoon Dijon mustard.
06 - 1/2 teaspoon salt.
07 - 1/4 cup all-purpose flour.
08 - 2 cups vegetable stock.
09 - 2 cups milk (or try almond milk).
10 - 1 big carrot, sliced thin.
11 - 2 cups grated cheddar cheese.
12 - 3 cups broccoli florets.
13 - Optional: crunchy breadcrumbs on top.

# Instructions:

01 - Throw the broccoli, carrot, broth, and mustard into the pot. Stir everything and simmer gently for 15-20 minutes until the broccoli softens.
02 - In a large pot, melt the butter. Toss in the chopped onion, salt, and a bit of pepper. Cook about 5 minutes until it's softened.
03 - Toss in the minced garlic and let it cook for about a minute. Sprinkle the flour in and stir constantly for 2 minutes until it's golden brown. Slowly pour the milk while stirring to avoid lumps.
04 - Gradually mix in the shredded cheese and keep stirring until it's melted and smooth. Taste and adjust the salt if needed. Sprinkle breadcrumbs on top if you like.
