Slice a pocket into each piece of chicken by cutting horizontally, but don’t go all the way through. Sprinkle both sides with garlic powder, paprika, and a little salt and pepper.

Mix together the bacon bits, cream cheese, shredded cheese, a sprinkle of garlic powder, and a touch of pepper and salt in a bowl. Keep stirring until everything’s evenly blended.

Stuff the prepared filling into the chicken openings you made earlier. Use toothpicks to seal where needed so nothing spills out.

Grab three shallow bowls: Fill one with flour, mix eggs and milk in another, and spread out the crushed Doritos in the last.

Dip the stuffed chicken in flour, give it a bath in the egg mixture, and then make sure it’s fully coated with the Dorito crumbs. Push the crumbs onto the chicken to help them stick.

Add oil to a big skillet and heat it up over medium. Fry each chicken breast for 4-5 minutes per side until golden and fully cooked (internal temp 74°C/165°F). Lay cooked pieces on a paper towel to soak up extra oil.

Set your oven to 190°C (375°F), and line a baking tray with parchment paper. Place Dorito-coated chicken on the tray, spray it lightly with baking spray, and bake for 25-30 minutes until the insides reach 74°C (165°F).

Give the cooked chicken a 5-minute break on the counter. If you used toothpicks, pull them out now. Pair it with your favorite dipping sauce or a side dish of veggies or salad.
