Cheesecake Filled Cookies (Print Version)

# Ingredients:

→ Cookies

01 - 120 g of butter
02 - 100 g of white sugar
03 - 100 g of brown sugar
04 - 1 large egg
05 - 1 teaspoon of vanilla extract
06 - 220 g of flour
07 - 1/2 teaspoon of baking soda
08 - 1/4 teaspoon of baking powder
09 - A pinch of salt
10 - 50 g of dried strawberries

→ Cheesecake Topping

11 - 120 g of cream cheese
12 - 2 tablespoons of sugar
13 - 1 teaspoon of vanilla extract
14 - 60 ml of strawberry jam

# Let's Cook:

01 - Whisk the cream cheese and sugar until smooth. Stir in the jam and vanilla. Chill the mixture until it firms up.
02 - Mix the butter with both sugars until creamy. Add the egg and vanilla extract. Combine with the dry ingredients, and fold in the dried strawberries. Let the dough sit in the fridge for 30 minutes.
03 - Preheat the oven to 180°C. Roll out the cookie dough, add the cheesecake mix in the center, and seal each portion into a round cookie shape.
04 - Bake the cookies for about 12–15 minutes, or until they’re golden brown.
05 - Let the cookies cool completely before you dig in.
