Cheesecake Strawberry Cookies (Print Version)

# Ingredients:

→ Cookie Dough

01 - ½ cup granulated sugar
02 - 1 large egg
03 - 1 teaspoon vanilla extract
04 - ½ cup unsalted butter, softened
05 - ¼ teaspoon baking powder
06 - ¼ teaspoon salt
07 - ½ teaspoon baking soda
08 - ½ cup freeze-dried strawberries, crushed
09 - ½ cup brown sugar
10 - 1¾ cups all-purpose flour

→ Filling

11 - ¼ cup strawberry jam or puree
12 - 4 oz cream cheese, softened
13 - 2 tablespoons granulated sugar
14 - 1 teaspoon vanilla extract

# Instructions:

01 - Whip the cream cheese with sugar, jam, and vanilla until no lumps remain, then chill in the fridge.
02 - Combine softened butter with both sugars, then mix in the egg and vanilla. Stir in dry ingredients and strawberries. Let the dough sit in the fridge for about 30 minutes.
03 - Shape a flat disc from a tablespoon of dough, spoon in filling, and cover with another flattened dough piece. Pinch to seal, then roll into a ball.
04 - Place them in a 350°F oven for 12 to 15 minutes, or until the color turns golden.
