Cheesecake Bites Strawberry (Print Version)

# Ingredients:

01 - 1 package (8 oz) softened cream cheese.
02 - 1 box (15.25 oz) strawberry-flavored cake mix.
03 - 4 ounces optional white almond bark for drizzling.
04 - 12 ounces pink-colored candy melts.

# Instructions:

01 - Pop the dry cake mix in the microwave for 30 seconds. Do this twice, stirring in between. Let it cool completely.
02 - Whip the cream cheese until smooth for about 2 to 2.5 minutes. Stir in the cake mix completely. Keep it covered and chill for 2 hours.
03 - Lay parchment on a baking sheet. Scoop out 1 tablespoon portions. Roll them into balls, set on the sheet. It’s fine to chill overnight if needed.
04 - Melt candy wafers in short 30-second bursts till smooth. Dip each ball, shake off the extra coating, and place back on the sheet.
05 - If using almond bark, melt it and drizzle over the balls. Refrigerate till ready to serve.

# Notes:

01 - Store in the fridge for up to 5 days.
02 - Freeze undipped balls for up to 2 months.
03 - Before dipping, let balls warm to room temperature so the coating won’t crack.
04 - Swap in any flavor of cake mix you like.
