01 - 1 cup self-rising flour
02 - 1 cup cottage cheese

# Instructions:

01 - Put the flour and cottage cheese into a large bowl. Use a spoon or spatula to mix until everything comes together into a sticky, soft dough. If it feels too sticky to handle, sprinkle in a little more flour, one tablespoon at a time, until it gets easier to work with.
02 - Sprinkle a clean counter or board with some flour, then tip the dough onto it. Split it into 4 evenly sized pieces. Press or roll each piece out gently into an oval or circle, around 1/4-inch thick.
03 - Preheat a dry non-stick pan or griddle over medium heat. Once it's hot, add a piece of the dough and cook each side for 2 to 3 minutes. You're looking for golden brown patches and a bread that's cooked all the way through.
04 - These breads taste best when they're warm. Serve them as they are, or add toppings like avocado, smoked salmon, hummus, or even a little honey.

# Notes:

01 - No self-rising flour? Just mix 1 cup all-purpose flour with 1 1/2 teaspoons baking powder and 1/4 teaspoon salt.
