Put the flour and cottage cheese into a large bowl. Use a spoon or spatula to mix until everything comes together into a sticky, soft dough. If it feels too sticky to handle, sprinkle in a little more flour, one tablespoon at a time, until it gets easier to work with.

Sprinkle a clean counter or board with some flour, then tip the dough onto it. Split it into 4 evenly sized pieces. Press or roll each piece out gently into an oval or circle, around 1/4-inch thick.

Preheat a dry non-stick pan or griddle over medium heat. Once it's hot, add a piece of the dough and cook each side for 2 to 3 minutes. You're looking for golden brown patches and a bread that's cooked all the way through.
