Cook the bacon pieces in a skillet over medium heat till they're crispy and browned. Let them drain on a paper towel after cooking.

Set your oven to heat up to 392°F (200°C). Lay out the puff pastry on a flat surface and give it a bit of a roll if needed.

Spread the shredded cheese evenly across the pastry. Toss on the cooked bacon, then sprinkle some black pepper. Roll it up tightly into a log, then slice it into pieces about 3/4 inch wide.

Arrange the slices on a baking sheet lined with parchment paper. Brush the tops with the egg yolk and sprinkle sesame seeds if you'd like. Bake for about 15-20 minutes or until golden brown.
