Cauliflower steak & sweet potato mash (Print Version)

# Ingredients:

→ For the Cauliflower

01 - 1 whole cauliflower
02 - 2 tablespoons olive oil
03 - 1 teaspoon garlic powder
04 - Salt and pepper to taste

→ For the Mash

05 - 2 medium-sized sweet potatoes
06 - 100ml soy cream
07 - 30g plant-based butter
08 - The zest of 1 orange
09 - 1/2 teaspoon garlic powder
10 - Salt and pepper to taste

→ For the Topping

11 - 100g cooked lentils
12 - 2 tablespoons crushed pistachios
13 - 2 tablespoons dried cranberries
14 - A few sprigs of fresh dill

# Instructions:

01 - Slice the cauliflower into thick pieces. Brush with olive oil, then sprinkle with garlic, salt, and pepper.
02 - Pop it into the oven at 210°C for about 30 minutes. Flip the pieces halfway through so they brown evenly.
03 - Cook the sweet potatoes, mash them up with soy cream, plant-based butter, orange zest, garlic, salt, and pepper.
04 - Heat up the lentils. Plate the mash, add a cauliflower steak on top, and layer on the lentils. Toss on the pistachios, cranberries, and some dill to finish.
