Slice the cauliflower into thick pieces. Brush with olive oil, then sprinkle with garlic, salt, and pepper.

Pop it into the oven at 210°C for about 30 minutes. Flip the pieces halfway through so they brown evenly.

Cook the sweet potatoes, mash them up with soy cream, plant-based butter, orange zest, garlic, salt, and pepper.

Heat up the lentils. Plate the mash, add a cauliflower steak on top, and layer on the lentils. Toss on the pistachios, cranberries, and some dill to finish.
