Carrot goat walnut brownie (Print Version)

# Ingredients:

→ Veggies

01 - 1 liter vegetable broth (2 cubes dissolved in 1 liter water)
02 - 600 g of carrots

→ Dairy

03 - 120 g melted butter
04 - 300 g goat cheese log

→ Other ingredients

05 - 3 eggs
06 - 225 g flour
07 - 1 packet baking powder
08 - 100 g chopped pecans (or mixed nuts)
09 - Salt and pepper to taste

# Instructions:

01 - Chop peeled carrots into rounds. Boil them in the veggie broth for at least 30 minutes, then drain, puree, and set aside.
02 - In a big bowl, combine the eggs with cubed goat cheese. Stir in the melted butter, flour, baking powder, and chopped nuts. Add the carrot puree, mixing everything well.
03 - Heat the oven to 200°C. Butter and flour an oven dish, then pour in the mix evenly. Bake at 200°C for 30 minutes.

01 - Serve warm or at room temperature with a simple green salad on the side.
