# Ingredients:

01 - 1 pre-made puff pastry sheet (store-bought or homemade)
02 - 1 small goat cheese log or soft chèvre
03 - 3 to 4 medium-sized carrots
04 - A handful of grated cheese (or shredded aged goat cheese)

→ Filling Mix

05 - 2 eggs
06 - 2 tablespoons of thick sour cream

→ Herbs & Spices (Pick Your Favorites)

07 - Ground cumin (to taste)
08 - Powdered coriander (to taste)
09 - Nutmeg (to taste)
10 - Sichuan pepper (spice it up, your call!)
11 - Fresh coriander (add some leaves)
12 - A sprinkle of fresh parsley
13 - Thyme (use fresh or dried)
14 - Citrus zest (like orange or lemon, for brightness)

# Instructions:

01 - Warm up your oven to 200°C.
02 - Stir together shredded carrots, goat cheese, eggs, and sour cream. Add your go-to herbs and spices.
03 - Roll out your puff pastry and poke holes in it with a fork.
04 - Pour the carrot mixture onto the prepared crust. Toss some grated cheese on top.
05 - Bake for a half-hour or until the top has a nice golden color.
