02 - Large onions - 3
03 - Soft goat cheese - 150 g

→ Seasoning and Flavors

04 - Olive oil - 2 tablespoons
05 - Honey (liquid) - 2 tablespoons
06 - Dried or fresh thyme - 1 teaspoon
07 - Salt - adjust to taste
08 - Ground black pepper - adjust to taste

→ Optional Topping

09 - Fresh arugula leaves - a small handful

# Instructions:

01 - Turn your oven on and preheat it to 180°C (around 350°F).
02 - Peel the onions first, then slice them thinly into rings. Heat some olive oil in a pan over medium heat. Cook the onion slices gently for 15-20 minutes.
03 - Put the thyme, salt, and pepper into the pan. Stir well and let it cook for another couple of minutes.
04 - Take your pastry and lay it flat inside a tart pan that's been greased and dusted with flour. Use a fork to poke tiny holes in the bottom.
05 - Spread the cooked onions evenly across the pastry. Crumble the goat cheese on top of the onions.
06 - Put the tart in the oven and bake it until the pastry turns golden brown, about 25-30 minutes.
07 - Pull the tart out of the oven. Brush some honey on top, and if you'd like, sprinkle a few arugula leaves as a garnish.

# Notes:

01 - Let the onions cook thoroughly for a rich flavor.
02 - Spread out the cheese and onions evenly.
03 - Serve the tart while it's still warm to enjoy it best.
04 - Pairs perfectly with a fresh green salad.
