Turn your oven on and preheat it to 180°C (around 350°F).

Peel the onions first, then slice them thinly into rings. Heat some olive oil in a pan over medium heat. Cook the onion slices gently for 15-20 minutes.

Put the thyme, salt, and pepper into the pan. Stir well and let it cook for another couple of minutes.

Take your pastry and lay it flat inside a tart pan that's been greased and dusted with flour. Use a fork to poke tiny holes in the bottom.

Spread the cooked onions evenly across the pastry. Crumble the goat cheese on top of the onions.

Put the tart in the oven and bake it until the pastry turns golden brown, about 25-30 minutes.

Pull the tart out of the oven. Brush some honey on top, and if you'd like, sprinkle a few arugula leaves as a garnish.
