Combine sugar and butter, beating them for a minute or two until fluffy. Slowly blend in the flour on a low speed until the dough forms.

Shape the dough into a ball, cover it with plastic wrap, then chill it for at least an hour.

Roll the dough to about 1/4 to 1/2 inch thickness and cut out shapes using cookie cutters. Chill the shapes while heating the oven.
