Start by heating olive oil and 1 tablespoon of butter in a large pan on medium. Drop in the sliced onions with a bit of salt. Stir them often and cook for 12-15 minutes until they're soft and have a nice golden color. Then, set them aside.

Wash the jasmine rice with running cold water. Keep rinsing it until the water is clear and free of starch.

In a medium pot, melt the rest of the butter over medium heat. Toss the washed rice in and stir it lightly to coat every grain with the butter.

Pour the water or broth into the pot and add salt and black pepper. Turn up the heat and wait until it boils. Then lower the heat, cover the pot, and let it cook gently for 15-18 minutes. Once the water is absorbed and the rice is ready, turn off the stove, leave it covered, and let it rest for 5 minutes.
