Burrata Toast Tomato (Print Version)

# Ingredients:

01 - 1 Italian loaf or baguette, sliced into pieces about 1-2 cm thick.
02 - 3 tablespoons olive oil, split between uses.
03 - 1-2 garlic cloves, peeled.
04 - 2-3 cups cherry tomatoes, halved.
05 - 1/4 of a small red onion, thinly sliced.
06 - 1/2 cup fresh basil, torn or chopped.
07 - 1 tablespoon balsamic vinegar.
08 - Kosher salt and black pepper, to your taste.
09 - A pinch of flaky salt for topping.
10 - Balsamic glaze for drizzling.
11 - Extra olive oil for topping.
12 - Extra fresh basil for garnish.
13 - Fresh burrata cheese.

# Instructions:

01 - Brush the bread slices lightly with olive oil. Toast or grill them, then rub both sides with a garlic clove.
02 - Combine the tomatoes, basil, red onion, balsamic vinegar, 2 tablespoons olive oil, salt, and pepper in a mixing bowl.
03 - Arrange the toasted bread on a serving platter. Spread burrata over each slice.
04 - Spoon the tomato mixture on top, drizzle balsamic glaze and extra olive oil, then sprinkle flaky salt and fresh basil over everything.

# Notes:

01 - Serve right away so the bread stays crispy.
02 - You can make the tomato topping up to 2 hours ahead.
