Broccoli & Carrot Bites (Print Version)

# Ingredients:

→ For the patties

01 - 70g breadcrumbs
02 - 6 tablespoons olive oil
03 - 1 egg
04 - 500g boiled broccoli
05 - 200g grated carrots
06 - 70g grated parmesan
07 - 1 tablespoon chopped parsley
08 - Curry, paprika, salt, and pepper

→ For the dipping sauce

09 - 1 plain yogurt
10 - 1 tablespoon olive oil
11 - ½ finely diced red onion
12 - 1 teaspoon chopped parsley
13 - 1 teaspoon lemon juice
14 - Salt and pepper

# Instructions:

01 - In a bowl, mix the yogurt, the finely diced red onion, parsley, lemon juice, olive oil, salt, and pepper together. Pop it in the fridge to chill.
02 - Mash the broccoli, then stir in the grated carrots, parmesan, the egg, parsley, and all the spices. Mix really well until everything comes together smoothly.
03 - Shape the mixture into patties, then roll them in the breadcrumbs so they’re fully coated.
04 - Preheat the oven to 200°C. Brush the patties with a bit of olive oil and bake them for 20 minutes until golden brown.

# Notes:

01 - These patties are great if you make them ahead and reheat in the oven.
02 - A fantastic way to get kids to eat more veggies.
