In a bowl, mix the yogurt, the finely diced red onion, parsley, lemon juice, olive oil, salt, and pepper together. Pop it in the fridge to chill.

Mash the broccoli, then stir in the grated carrots, parmesan, the egg, parsley, and all the spices. Mix really well until everything comes together smoothly.

Shape the mixture into patties, then roll them in the breadcrumbs so they’re fully coated.

Preheat the oven to 200°C. Brush the patties with a bit of olive oil and bake them for 20 minutes until golden brown.
