Tater Tot Burritos (Print Version)

# Ingredients:

01 - 8 large eggs, whisked lightly
02 - 2 tablespoons olive oil
03 - ⅓ cup half-and-half cream
04 - Kosher salt and fresh black pepper to taste
05 - 8 breakfast sausage links, casings taken off
06 - 2 cups tater tots, frozen

→ Filling Ingredients

07 - 1 cup Monterey Jack cheese, shredded
08 - 1 cup cheddar cheese, shredded
09 - ¼ cup fresh cilantro, chopped
10 - 8 flour tortillas, 8 inches wide
11 - 2 Roma tomatoes, chopped small
12 - 1 can refried beans (16 ounces)

# Instructions:

01 - Set your oven to 400°F and bake the tater tots for 20-25 minutes until they turn crispy and golden.
02 - Warm olive oil in a big pan over medium heat. Cook the sausage for about 3-5 minutes, crumbling it apart as it browns. Keep 1 tablespoon of the fat in the skillet.
03 - Using the same skillet, cook the eggs while stirring over medium heat. Pour in the half and half when the eggs start setting. Season with salt and pepper, and cook until creamy, about 3-5 minutes.
04 - Spread refried beans on the tortillas. Add a layer of sausage, tater tots, eggs, cheeses, tomatoes, and cilantro. Fold the sides in and roll them up tightly.
05 - Lay the burritos seam-side down on a baking tray. Bake them for 12-15 minutes until hot and the cheese melts.

# Notes:

01 - Wrap tightly in foil or plastic and freeze for up to 3 months.
02 - To warm up a frozen burrito: microwave it 1-2 minutes on each side, then toast in a skillet or oven if you prefer it crispy.
