Blueberry Oatmeal Bars (Print Version)

# Ingredients:

→ Dry Base

01 - 1/2 teaspoon cinnamon
02 - 1/4 teaspoon baking soda
03 - 3/4 cup all-purpose flour
04 - 1/3 cup light brown sugar
05 - 1 cup old-fashioned oats
06 - 1/4 teaspoon salt

→ Wet Ingredients

07 - 1 teaspoon vanilla extract
08 - 6 tablespoons unsalted butter, melted

→ Filling

09 - 1/4 cup granulated sugar
10 - 2 teaspoons cornstarch
11 - 1 cup blueberries

# Instructions:

01 - Turn your oven on to 375°F (190°C). Line an 8-inch square baking pan with parchment, leaving some hanging over the edges for easy removal later.
02 - Stir together the oats, flour, sugar, salt, baking soda, and cinnamon in a bowl. Add the vanilla and melted butter, stirring everything until it forms a crumbly texture.
03 - Take half of the crumbly mixture and press it down tightly into your prepared pan, making an even layer.
04 - Coat the blueberries with the sugar and cornstarch. Make sure the coating is even before spreading the blueberries on top of your base layer.
05 - Scatter the rest of the crumbly mixture over the berries and gently press it to hold everything together.
06 - Bake for 35-40 minutes until the top is golden and the blueberry juice is bubbling. Let the baked bars cool completely before using the parchment to lift them out and cut them into squares.

# Notes:

01 - For a zesty twist, mix some lemon zest into the blueberries.
02 - Throw in some almond meal with the oat mixture if you want added crunch.
03 - Store these in an airtight container, and they'll stay delicious for 5 days.
