Blueberry energy bites (Print Version)

# Ingredients:

→ Foundation

01 - 3/4 cup (75 g) of large oat flakes
02 - 1/2 cup (50 g) of almond flour
03 - 1 c. (5 ml) of vanilla extract
04 - 1 tablespoon (15 ml) of almond butter
05 - 2 dates
06 - 1/2 cup (65 g) of partially thawed frozen blueberries
07 - Shredded coconut (optional)

# Instructions:

01 - Blend the large oat flakes in a food processor until you get a smooth, powdery texture, but not as thin as fine flour.
02 - Toss in the almond flour, blueberries, almond butter, dates, and the vanilla extract into the food processor.
03 - Blend everything together until it’s well combined, but make sure to stop before it turns into a paste.
04 - Roll out 9 evenly sized balls using your hands. If it gets sticky, lightly wet them to make it easier.
05 - Roll the balls in shredded coconut for that extra flair (if you want), then pop them into the fridge.

# Notes:

01 - Store these in the fridge to keep them fresh.
02 - Soak dried dates in warm water for 10 minutes beforehand if they’re too tough.
