Blend the large oat flakes in a food processor until you get a smooth, powdery texture, but not as thin as fine flour.

Toss in the almond flour, blueberries, almond butter, dates, and the vanilla extract into the food processor.

Blend everything together until it’s well combined, but make sure to stop before it turns into a paste.

Roll out 9 evenly sized balls using your hands. If it gets sticky, lightly wet them to make it easier.

Roll the balls in shredded coconut for that extra flair (if you want), then pop them into the fridge.
