Mix mayo, pickles, mustard, ketchup, and paprika in a bowl. Stir well and chill it while prepping the rest.

On medium-high heat, warm up a skillet. Toss in the beef and half of the onion. Cook, stirring, until the meat's no longer pink and the onions soften—around 7 to 8 minutes. Add garlic powder, black pepper, and salt to taste. Drain any extra grease, if needed.

Spread out the tortillas on your counter. Top each with some shredded lettuce, beef, the rest of the onion, sliced pickles, and grated cheddar.

Pour some of the chilled sauce onto each tortilla. Fold them snugly, pulling in the sides as you go for a nice wrap. Serve right away and enjoy.
