Ground Beef Enchiladas (Print Version)

# Ingredients:

01 - 1/2 onion, chopped.
02 - 1 pound minced beef.
03 - 2 1/2 tablespoons taco seasoning.
04 - 1/4 cup of water.
05 - 8 soft wraps.
06 - 16 ounces of grated cheese.
07 - 2 cups of enchilada sauce.
08 - Avocado chunks.
09 - Fresh green onions.
10 - Fresh salsa.
11 - Sour cream.

# Instructions:

01 - Set oven to 375° to preheat.
02 - Cook the beef and onions together until the meat's browned. Drain the grease.
03 - Stir in the seasoning mix and water. Let it cook till the liquid evaporates.
04 - Spread half a cup of sauce on the bottom of a 9x13 dish.
05 - Scoop about 1/3 cup of the beef mix and 1/4 cup of cheese into each wrap. Roll them up and arrange them seam-side down in the dish.
06 - Pour the rest of the sauce over the wraps and sprinkle the remaining cheese on top.
07 - Pop it in the oven for 20-25 minutes, until it's bubbling.
08 - Pile on your favorite toppings and enjoy while hot!

# Notes:

01 - You can freeze this before baking. Wrap tightly and store for up to 3 months. To cook from frozen, bake at 45 minutes covered, then uncover and bake 5 more minutes.
