Tropical Banana Bread (Print Version)

# Ingredients:

01 - 125g granulated sugar
02 - 3 overripe bananas, mashed
03 - 1 large egg
04 - 55g light brown sugar
05 - 60ml vegetable or canola oil

→ Dry Ingredients

06 - ½ teaspoon salt
07 - 1 teaspoon baking soda
08 - 190g plain flour
09 - 1 teaspoon baking powder

→ Mix-Ins

10 - 60g finely chopped pecans
11 - 50g sweetened coconut flakes
12 - 80g small pineapple chunks, drained well

→ Cream Cheese Frosting

13 - 60g softened butter
14 - ½ teaspoon vanilla essence
15 - 115g cream cheese, softened
16 - 40g chopped pecans for topping
17 - 65g sifted powdered sugar
18 - ½ teaspoon ground cinnamon

# Instructions:

01 - Set your oven to 175°C (350°F) and lightly coat a regular loaf pan with nonstick spray.
02 - Using a handheld mixer, blend the mashed bananas, egg, both sugars, and oil until it's all smooth and creamy.
03 - To the banana mix, add flour, salt, baking powder, and soda. Stir until just mixed. Then, carefully fold in the coconut, pineapple chunks, and pecans.
04 - Pour the batter into the loaf pan. Bake for 55-60 minutes. Use a toothpick to check doneness—it should come out clean. Cool completely on a wire rack.
05 - Whisk the cream cheese and butter together until fluffy. Add the powdered sugar, cinnamon, and vanilla. Mix until creamy and smooth.
06 - Once the loaf has cooled, evenly spread the cream cheese frosting over it. Sprinkle the pecans on as a finishing touch.
