Spinach Mushroom Quesadillas (Print Version)

# Ingredients:

→ Base

01 - 1 cup of cheese, shredded
02 - 4 big flour tortillas

→ Vegetables

03 - 1 cup mushrooms, thinly sliced
04 - 2 cups chopped fresh spinach leaves

→ Seasonings

05 - A tablespoon of olive oil
06 - A pinch of salt and black pepper
07 - 1/2 teaspoon garlic powder
08 - 1/4 teaspoon (optional) dried thyme
09 - A bit of onion powder, 1/2 teaspoon
10 - Brush with olive oil or spray with cooking oil

# Instructions:

01 - Brush tortillas with a little oil, then bake at 400°F for around 10-12 minutes until nicely browned.
02 - Put the cheese and veggies on one side of each tortilla. Fold them in half to close.
03 - Cook the mushrooms for 5 minutes, toss in spinach till it softens. Sprinkle with seasonings.

01 - Any cheese works well here.
02 - Pair with some sour cream or salsa.
