Peel the shrimp but leave the tail on. Remove the casing from the chorizo and slice it into half-circles. Chop the shallot and garlic really small.

In a deep skillet, dry-cook the garlic, shallot, and chorizo for a few minutes. Toss in the shrimp and keep cooking.

Pour in the heavy cream and mix in the Parmesan. Stir gently and let it simmer until the cheese melts completely.

Heat the oven to 200°C. Pour the mixture into small baking dishes or a casserole dish. Sprinkle extra Parmesan on top and bake for 15 minutes.

Take it out of the oven and generously sprinkle chopped chives over the top. Serve right away.
