Shrimp with chorizo and parmesan (Print Version)

# Ingredients:

→ Dairy Products

01 - 20cl of heavy cream
02 - 50g of grated Parmesan (and a little extra for topping)

→ Shellfish

03 - 500g of peeled shrimp with tails left on

→ Cured Meats

04 - 70g of chorizo with the casing removed

→ Herbs and Seasonings

05 - A large shallot, finely chopped
06 - A big garlic clove, minced
07 - Chopped chives

# Instructions:

01 - Peel the shrimp but leave the tail on. Remove the casing from the chorizo and slice it into half-circles. Chop the shallot and garlic really small.
02 - In a deep skillet, dry-cook the garlic, shallot, and chorizo for a few minutes. Toss in the shrimp and keep cooking.
03 - Pour in the heavy cream and mix in the Parmesan. Stir gently and let it simmer until the cheese melts completely.
04 - Heat the oven to 200°C. Pour the mixture into small baking dishes or a casserole dish. Sprinkle extra Parmesan on top and bake for 15 minutes.
05 - Take it out of the oven and generously sprinkle chopped chives over the top. Serve right away.

# Notes:

01 - Using the oven to bake this dish is optional, but it’ll give it way more flavor.
02 - You can prep everything ahead of time if you want.
