Separate the drumsticks from the thighs.

Peel the onions and chop them roughly. Remove the skin from the potatoes and cut them in half.

Slice the chorizo stick into pieces about 1 to 2 cm wide.

Place all these things on a baking tray. Sprinkle over some salt, pepper, and dried thyme.

Drizzle with olive oil and balsamic vinegar. Pour a bit of water (6-8 cl) at the bottom.

Preheat your oven to 180°C. Bake everything for about 50-55 minutes, stirring occasionally while it cooks.

Sprinkle some seeds over it right before serving.
