Chicken with Chorizo & Potatoes (Print Version)

# Ingredients:

01 - 4 chicken legs (thighs and drumsticks).
02 - 10 medium-sized potatoes.
03 - Half a stick of mild chorizo.
04 - 2 red onions.
05 - Dried thyme.
06 - 4 tablespoons of olive oil.
07 - 3 tablespoons of balsamic vinegar.
08 - Golden flax seeds or sesame seeds.
09 - Salt and pepper.
10 - 6-8 cl of water.

# Instructions:

01 - Separate the drumsticks from the thighs.
02 - Peel the onions and chop them roughly. Remove the skin from the potatoes and cut them in half.
03 - Slice the chorizo stick into pieces about 1 to 2 cm wide.
04 - Place all these things on a baking tray. Sprinkle over some salt, pepper, and dried thyme.
05 - Drizzle with olive oil and balsamic vinegar. Pour a bit of water (6-8 cl) at the bottom.
06 - Preheat your oven to 180°C. Bake everything for about 50-55 minutes, stirring occasionally while it cooks.
07 - Sprinkle some seeds over it right before serving.

# Notes:

01 - A hearty main course, great with a side of green salad.
02 - Leftovers keep well in the fridge for about 2-3 days.
