Cheesy Cottage Eggs (Print Version)

# Ingredients:

01 - 9 large eggs or about 8 if they're very big
02 - A cup of cottage cheese
03 - ½ cup of cheddar, grated
04 - A tiny pinch of pepper, about ⅛ teaspoon
05 - ¼ teaspoon of salt

→ Extra Toppings

06 - ⅓ cup of cooked, crispy bacon pieces
07 - 2 tablespoons of fresh chives, chopped

# Instructions:

01 - Turn your oven to 350°F and lightly coat a silicone muffin tray with nonstick spray.
02 - Toss eggs, cottage cheese, cheddar, salt, and pepper into a blender. Blend until everything's silky and totally combined.
03 - Pour the blended mix evenly into the muffin pan cups, filling each just past halfway. Add bacon bits and chives (or other extras) on top, if you'd like.
04 - Pop the tray into the oven for 20–22 minutes. Let the egg bites cool down a bit before taking them out of the silicone pan.

# Notes:

01 - You can leave out the bacon and chives if you like.
02 - Great for prepping meals ahead of time and storing in the freezer.
