Turn your oven to 350°F and lightly coat a silicone muffin tray with nonstick spray.

Toss eggs, cottage cheese, cheddar, salt, and pepper into a blender. Blend until everything's silky and totally combined.

Pour the blended mix evenly into the muffin pan cups, filling each just past halfway. Add bacon bits and chives (or other extras) on top, if you'd like.

Pop the tray into the oven for 20–22 minutes. Let the egg bites cool down a bit before taking them out of the silicone pan.
