In a small pot, melt the butter and whisk in the flour. Let it cook for about a minute.

Gradually pour milk into the roux, stirring constantly until the mixture thickens (takes about 5 mins). Take it off the heat and stir in the cheese until it melts. Add salt and pepper.

Pour the warm cheese sauce over fries, add crumbled bacon, a drizzle of sour cream, and chopped green onions on top.
