Slice the chicken into strips. Chop the peppers and slice the mushrooms. Combine the soy sauce, oyster sauce, honey, and dissolved cornstarch in a small bowl.

Heat the oil in a wok over medium-high heat. Cook the chicken until golden and fully done, about 5-7 minutes. Set aside.

Using the same pan, stir-fry the garlic and ginger for 1 minute. Toss in the peppers and mushrooms, cooking them for around 5-7 minutes.

Add the chicken back to the pan, pour in the sauce, and stir everything together. Cook for 2-3 minutes until the sauce thickens.

Serve it warm, topping with sesame seeds and green onion slices. Enjoy with noodles or rice on the side.
