Pear Salad with Balsamic (Print Version)

# Ingredients:

→ Balsamic Dressing

01 - ⅓ cup of extra virgin olive oil
02 - 3 tablespoons of balsamic vinegar
03 - 1 tablespoon of Dijon mustard
04 - 1 garlic clove, minced or grated
05 - A small pinch (¼ teaspoon) of fine salt
06 - Freshly ground pepper, just ⅛ teaspoon

→ Salad Mix

07 - A little bag (5 ounces) of arugula
08 - Half of a small red onion, sliced thin
09 - 3 pears, pick any kind you like

→ Extras

10 - 4-5 ounces of goat cheese
11 - 1 cup of dried cranberries
12 - ½ cup of pecans, toasted and cooled down

# Instructions:

01 - If you want, you can mellow the onion's bite by soaking them in icy water for 10 minutes, then pat dry after draining.
02 - Get all the vinaigrette ingredients into a jar, close the lid tight, and shake until blended.
03 - Put your arugula into a big serving bowl, then add sliced pears and onion over it.
04 - Throw in some goat cheese, cranberries, and pecans right on top.
05 - Give that dressing another shake and pour it all over the salad right before serving.

# Notes:

01 - Feel free to swap pears for apples.
02 - Try pomegranate seeds instead of cranberries.
03 - Switch up the nuts (walnuts, pine nuts, or almonds work too).
04 - Try other cheeses like parmesan, gorgonzola, or feta.
