Air Fryer Eggplant (Print Version)

# Ingredients:

→ Main

01 - 1 big eggplant

→ Sauce

02 - 2 tablespoons of garlic, minced (about 3 cloves)
03 - 2 tablespoons of avocado oil
04 - 1 tablespoon of optional chili oil
05 - 2 tablespoons of low-sodium soy sauce
06 - 2 tablespoons of white granulated sugar

# Instructions:

01 - Cut your eggplant into half-inch thick slices. In the middle of each slice, make some slits to hold the sauce.
02 - In a shallow dish, combine garlic, soy sauce, oil, sugar, and a bit of chili oil if you like a kick.
03 - Lay your eggplant slices on some parchment paper in the air fryer. Spoon the sauce over the top. Cook them at 350°F for 15 minutes. For extra crisp, broil for 2 minutes if you want.

# Notes:

01 - Switch to an oven at 375°F and bake for 30 minutes if you prefer.
