Cut your eggplant into half-inch thick slices. In the middle of each slice, make some slits to hold the sauce.

In a shallow dish, combine garlic, soy sauce, oil, sugar, and a bit of chili oil if you like a kick.

Lay your eggplant slices on some parchment paper in the air fryer. Spoon the sauce over the top. Cook them at 350°F for 15 minutes. For extra crisp, broil for 2 minutes if you want.
